A steam trap is a device used to discharge condensate and non condensable gases with a negligible consumption or loss of live steam. Most steam traps are nothing more than automatic valves. They open, close or modulate automatically. Air lock is a device used in beer brewing and wine making that allows carbon dioxide released during fermentation to escape the fermenter, while not allowing air to enter the fermenter, thus avoiding oxidation. Possibly used at Buffalo Brewing co., Sacramento, CA.
