A trio of trade cards from C.J. van Houten & Zoon, Chicago & NY, advertising van Houten's Cocoa, c1880s-1910s. Chromo-liths, one of them cut off-center. Undated. In 1828, Casparus van Houten (1770-1858), chocolate factory owner in Amsterdam, patented a manually operated hydraulic press that squeezed the cocoa butter out of cocoa solids, therefore getting a cake that could be ground into cocoa powder. His son, Coenraad Johannes van Houten (1801-1887), a Dutch chemist & chocolate maker, invented a way to remove the bitter taste from cocoa & make it more water soluble. These inventions not only allowed for an easier way to make hot cocoa & chocolate drinks, but also paved the way for manufacturers to add butter back into it, making the chocolate that we know today.
